A classic spinach artichoke dip is pretty darn hard to beat. Layered with spinach, artichoke, chèvre cheese, and shredded cheese – this makes a perfect lunch.  Blue Bay mozzarella and chèvre cheese might be a perfect choice for this recipe.

Ingredients

2 pieces light bread
1 tbsp. chèvre cheese
2 tbsp. chopped artichoke hearts (defrosted or drained and rinsed)
1/2 cup fresh spinach
3 tbsp shredded mozzarella cheese
Salt and pepper

Instructions

Microwave the chèvre cheese for about 30 seconds until soft.
Mix in the spinach, artichoke hearts, cheese, salt, and pepper.
Spread the mixture into between the two slices of bread.
Grill in a skillet coated with non-stick cooking spray until warm and toasty.
